Ricetta
Step 1
Peel, slice and sweat the onion in a frying pan for 5 minutes in 2 tbsp of oil. Add the zucchini sliced into rounds and the crushed clove of garlic and cook for 15 minutes. Leave to cool.
Step 2
Wash the parsley and the coriander and place in a food processor, add the contents of the frying pan, the tahini, the can of chickpeas, rinsed and drained, the lemon juice and the remaining oil. Season and blend until you get a creamy consistency but still with some texture.
Step 3
Put in a bowl in a cool place. Wash and finely slice the radishes on a mandolin and add them to half of the hummus. Season and sprinkle with sesame seeds.
Serve with grissini or strips of bread.

- 4 cl of olive oil
