
Autumn pilaf with butternut squash and smoked garlic
SERVES 4
Recipe
Step 1
Peel the squash and cut it into small cubes. Slice the onion and chop the garlic. Crush the cardamom.
Step 2
Gently sauté the onion, the garlic and the cardamom in olive oil.
Step 3
Add the diced squash and brown for 5 minutes.
Step 4
Add the rice, mix thoroughly and then cover with the hot stock.
Step 5
Cover and simmer gently for around 18-20 minutes.
Step 6
Correct the seasoning, sprinkle with thyme and serve hot.

• 250 g of Basmati rice
• 300 g of butternut squash
• 1 red onion
• 2 cloves of smoked garlic
• 3 cardamom seeds
• 60 cl of vegetable stock
• 1 tbsp. of olive oil
• Salt, pepper, thyme
