Scallop tartare with exotic fruits

Step 1

Remove the pulp from the passion fruit. Cut the pineapple and mango into very small cubes. Cut the vanilla pod in half and remove the inside. Place the seeds in a bowl and mix with the olive oil, lemon zest and juice.

Step 2

Using a knife, coarsely chop up the shellfish, without pressing too hard to avoid heating the flesh. Mix with the fruit and the contents of the chilled bowl. Season with salt and pepper.

Step 3

Arrange the tartars in a pastry cutter and decorate with the coriander leaves.
