Cellar Master Xavier Berdin and his team of oenologists are the guardians of the Palmer & Co style. With sensitivity and passion, they oversee the wines of yesterday, today and tomorrow. Xavier’s roots in Champagne run deep. Like his father, his grandfather and generations before them, he continues the purest Champagne winemaking tradition. This love of the craft, passed down from father to son and from master to apprentice, allows the House of Palmer & Co to remain true to its founding values of excellence.

Reserve wines
For our non-vintage cuvees, the “reserve wines” from previous harvests are used to complement the wines of the current year. A true signature of the Palmer & Co style, they bring richness, depth and complexity to the blends, while ensuring remarkable consistency of taste. Crafted using a unique savoir-faire, in the spirit of a perpetual reserve, they are made from previous blends of each cuvee, thus imparting a distinctive character and perfect balance.

The Soleras
As one of the very few Champagne Houses to have adopted the emblematic ageing technique used for some of Spain’s greatest wines, we have made the solera a cornerstone of our identity. With each harvest, new wines enrich those already held in reserve, nurturing a perpetual reserve that is living and ever-evolving. A true sensory memory, this method reveals a unique aromatic depth, marked by spicy nuances and remarkable complexity.
