Ricetta
Step 1
Wash and finely chop the leeks. Heat the oil with the butter and cook the leeks on a low heat for 20 minutes without browning. If they show signs of browning, put a lid on the pan. Add salt, pepper, and the herbs. If there is any cooking liquid left in the pan, drain it off.
Step 2
Fry the bacon pieces over a high heat for 3 minutes without adding extra fat. Cut the Cheddar into small cubes or chop roughly.
Step 3
Mix the leeks with the bacon pieces and the cheese. Allow to cool thoroughly.
Step 4
With a pastry cutter 10-12 cm in diameter, cut out discs of puff pastry. Preheat the oven to 180°C. Place a little of the filling to one side of each disc and fold the pastry over on itself. Seal the edges by pressing firmly with your fingers. As you complete the turnovers, place them on a baking tray lined with a silicone baking mat. Brush with the beaten egg yolks.
Step 5
Bake in the oven for 15-20 minutes. Enjoy cold or warm.

- 2 rectangular rolls of puff pastry
- 4 leeks
- 125 g of chopped smoked bacon
- 125 g of Cheddar
- 25 g of butter
- 2 tbsp of olive oil
- 1 tsp of herbes de Provence
- 2 egg yolks
- Salt
- Pepper
