Recipe
Step 1
Dice the trout fillets.
Step 2
Peel the orange, the lime and the grapefruit, taking care to remove any white pith. Carefully segment the fruit and cut into small pieces.
Step 3
Finely chop the shallot.
Step 4
Finely snip the chives.
Step 5
Mix all the ingredients in a bowl.
Step 6
Drizzle with olive oil and season with salt and pepper.
Step 7
Chill for at least 30 minutes before serving.
You can add a little mayonnaise to season the tartare.
