Broccoli and kiwi tartare, apple jelly

SERVES 4

Recipe

Step 1

Wash the broccoli and chop coarsely in a blender. Wash the herbs and chop.

Step 2

Wash and core the apple, then cut into very small cubes without peeling. Peel the avocado and cut into small cubes. Sprinkle the apple and avocado with half of the lemon juice.

Step 3

Mix all the preceding ingredients together and season with salt and pepper.

Step 4

Peel the garlic and the ginger. Place in the bowl of a small blender with the sunflower seeds, the rest of the lemon juice and the oil. Blend to a smooth texture. If necessary, add a little water. Pour this sauce into the tartare and mix thoroughly.

Step 5

Arrange the mixture into a tall pastry ring. Decorate with a few of the apple cubes that you have set aside.

  • 3 tbsp of sunflower seeds
  • 1 small nub of ginger
  • 1 small clove of garlic
  • 1 lemon
  • 3 cl of olive oil
  • Salt
  • Pepper
