White chocolate mousse with vanilla

Recipe

Step 1
Melt the white chocolate in a double boiler.

Step 2
Separate the egg whites from the yolks. Add the yolks to the melted chocolate with the seeds from the vanilla pod.

Step 3
Whip the cream. Stir it gently into the chocolate and vanilla mixture.

Step 4
Beat the egg whites with a pinch of salt until stiff and gently fold into the chocolate.

Step 5
Divide into separate serving glasses and chill for at least 3 hours before serving.

Ingredients

• 200 g of white chocolate
• 3 eggs
• 20 cl of well chilled whipping cream
• 1 vanilla pod (or vanilla extract)
• A pinch of salt
